Main Course - Pork

Baby Back Ribs
Place a rack of baby backs in a shallow baking pan with a metal rack underneath.
Sprinkle on garlic powder and spoon on apricot preserve. Cook in the oven at 250
for about 6 hours. When the preserve turns black, the ribs are done. These ribs are sweet
and the meat will fall right off the bone.

The Heart Clogger
Melt a package of cheddar cheese in a small sauce pan, along with a cup of bacon bits.
Serve with steak fries.
This is like having potato skins, but with less potato and more cheese and bacon!
===============================================================
The Pepperoni Pizza Omlette
This omlette is a welcome change from just having bacon as a side dish.
Make an open face omlette with swiss cheese and add:
crisp pieces of pepperoni and slices of tomato.

Spanish Rice
Mix together in an oven dish:
Cooked rice,
Chopped up Italian sausage that was cooked in spaghetti sauce and
Mozzarella cheese. Top with more Mozzarella cheese.
Bake in the oven at 350 degrees for 30 minutes.
===============================================================
Sausage and Peppers and Onions
This is a staple in an Italian household.
Fry up some onions and remove.
Cut up some Italian sausage in about 3 inch sections and brown on each side.
Add some roasted peppers (Mancini brand is best).
Put the onions back in and fry another 10 minutes.
Serve with some Italian bread.
===============================================================
Breakfast Burrito
This combines Italian sausage, onions and potatoes in a burrito.
Fry up some onions, cut up potatoes and Italian sausage.
Next, add a couple of eggs to the pan and scramble up.
Place a flour burrito in the oven and broil each side until warm.
Add the pan contents and fold.

Pepperoni Pizza
You can make your own dough, but I'm lazy. I just buy it.
Roll out the dough onto a cookie sheet and sprinkle garlic powder on it.
Spoon on the pizza sauce (I prefer Classico's).
Next add your cheese (I prefer 6 cheese Italian).
Then spread on the pepperoni. I use the packaged, sliced pepperoni.
Bake on the top shelf at 500 degrees until the crust turns brown (10 - 15 minutes).
If the bottom isn't brown, put the sheet on the bottom rack and cook until brown.
